The word Nabati is designed in lowercase letters with a broad font. The font is filled with attractive red color which reminds me of squeezed out jam. Have you tried writing with the jam when squeezing it out?

Do you see the Richeese word? This is quite puzzling. Can we read it as Rich-eese or Ri-cheese. May be the word Richeese has something hidden.

Taste Experience of Nabati Cheese Wafer

I told you I just had a wafer. Let me just tell you how it looked and tasted. I am already craving for another one. When I opened, strong cheese flavour gushed out of the treat. Then I sensed milk flavour. We know cheese is made out of milk. While gasping the treat, it gives more aroma of cheese and milk.

What are those patterns? I used to count it while eating? Haha!
While visualizing the treat, the upper layer is designed as a tiny rhombus. It is mild orange in colour. Totally 3 wafer sheets are combined into one wafer biscuit overwrapping the cream. Cream is mild orange in colour. I separated three wafers and the cream sticks inside rhombus boxes. The bottom wafer is in square shape.

I took the wafer in my hand.  I broke it into two. I would suggest to break it before eating it. The wafer was rough on the both the sides. Don’t forget the cream. Cream is sticky.

I’ll tell you about how it tastes. It is crunchy. I could easily sense the cheese taste. I also felt the mixed taste of cheese and vanilla. It feels sugary. The treat quickly dissolves in the mouth. I crunched. The wafer particles spread over my mouth. I made all over my lips and nose. Eeee. Wafer to cream experience.

The cream stays in my mouth. I didn’t realize this craves me more. Because I remembered saying that my mom hid this. Because I ate more packs the last day. That’s just crazy, right?
After having the wafer, sugariness stays for a long time.

Nabati Cheese Wafer’s Ingredients

Nabati cheese wafer is made of two major parts, cream and wafer sheet.They are then combined to form the cheese wafer. It is good to know that ingredients are already split and mentioned on the pack. It’s pretty easy for me. Eeee.
Firstly, let me brief you about the ingredients used for production of cream, followed by the ingredients required for production of wafer sheet.

Cream

The cream contains about 59 % of cheese wafer. The following ingredients are used to make the cream.

How : From sugarcane, the juice is extracted. Then the juice is heated, filtered and purified. Then it is crystallized to produce sugar.
Why : The first ingredient used in making cream is sugar.  Its ultimate role is to provide sweetness. It also gives the texture to the cream as it is used in a higher amount in the cream.

  • Palm Olein

Source : Palm fruit
How : Edible Vegetable Oil (Palm Olein) is obtained by extracting palm oil from reddish pulp of a palm fruit. The palm oil contains fifty percent saturated and fifty percent unsaturated fat content. The unsaturated fat is separated using fractional distillation method to produce palm olein oil. It is liquid at room temperature.
Why : This edible vegetable oil gives the velvetty nature to the cream. It improves the texture of the cream and also gives a glossy effect to the cream.

Cheese powder is made up of multiple ingredients.  Cheese powder gives cheese flavour and texture to the cream. Let us now look up about the multiple ingredients used for making the cheese powder.

  • Sugar

How : From sugarcane, the juice is extracted. Then the juice is heated, filtered and purified. Then it is crystallized to produce sugar.
Why : Sugar is also the base ingredient for the production of cheese powder. This provides  taste and texture.

  •  Cheese Solids

Source : Hard Cheese
How : Hard cheese is first melted and then emulsions are added to keep the mixture stable. Then it is spray dried to produce cheese solids by evaporating water content from it.
Why : Cheese solids are just the powdered form of cheese. It is added here to give the cheese flavour and taste. Milk cheese is used for production.

  • Maltodextrin

How :  Maltodextrin  is produced by enzymatic hydrolysis of corn.
Why :  Maltodextrins mostly  act as  filler agents, it also acts as a carrier which holds the colour added in it. It also provides sweetness. These are added to impart colour to the cream, enhance the visual appearance of the product and also to give better mouthfeel to the consumer.

How : The water content in the milk is evaporated to produce milk solids or milk powder. The milk solids contain protein, lactose and fat which are the remaining contents after evaporation of the water content from milk.
Why : Milk powder gives richness, flavour and good texture to the cream.

How : Corn grain is divided into four main parts by a wet milling process. They are germ, gluten, starch and fiber. Starch is separated from this and it is ground to powder form called corn starch.
Why : Corn starch adds bulkiness to the cream by acting as a thickener and also provides the improved consistency of the cream.

How : Soy beans are used to produce soybean oil. During this production, soy lecithin is obtained as a by-product of soybean oil production.
Why : Soy lecithin is an emulsifier, it is added to hold ingredients together which cannot be mixed together easily.

Name : Citric Acid
Source : Molasses
How : Citric acid is produced by fermentation of molasses by aspergillus niger. Molasses is sourced from sugarcane.
Why : The citric acid acts as an acidity regulator and maintains the pH of the cream. It also helps in the preservation of the cream.

The wafer sheet contains about 41 % of cheese wafer. Let’s now see about the ingredients used for the production of the wafer sheet.

How : Wheat bran is separated from the wheat grain during the milling process. Then the starchy white part of the wheat grain is grounded to produce refined wheat flour.
Why : Refined wheat flour acts as a base ingredient for the production of the wafer sheet, and also gives texture to the wafer sheet.

  • Palm Olein
