Taste Experience of Dairy Milk Butterscotch

I opened the pack, as you know it's chocolate. What did I sense? It’s chocolate with slight milk aroma and mild vanilla flavour.

Dairy Milk visually looks chocolate brown in colour and rectangle in shape. 4 cubes are present in  two rows. Cadbury logo is embossed on each chocolate cube.

Chocolate delivers a smooth sense, when it is touched. It is easy to break and splits into cubes easily.

At first bite, the chocolate gives the crunchier feel because of butterscotch added in the treat. When chocolate reaches the tongue, it slowly  dissolves and delivers the taste of butterscotch with sweetness and vanilla taste. The chocolate takes time to melt  in the tongue.

Smooth, waxy and chill mouthfeel is observed. After eating the treat. Chocolate flavour can be sensed for a few minutes which further makes me mouthwatering to consume more.

The ingredients used in Dairy Milk Butterscotch are sugar, milk solids, butterscotch, cocoa butter, cocoa solids, edible vegetable fat, emulsifiers and added flavours.

How : Castor oil is hydrolyzed and made to react with polyglycerol. Both compounds undergo interesterification which produces polyglycerol ester i.e. PGPR.
Why : PGPR holds the  ingredients together and  reduce the viscosity of chocolate i.e. it helps the liquid chocolate to get filled in the moulding. It also helps in releasing air bubbles and reduces blooming of the chocolate.
